The lemon is a small evergreen tree belonging to the flowering plant family. When it's young, it's green, and gets bright yellow, which has a sour taste and strong citrus smell. Lemons are not mostly eaten for their sour taste, but the juice and zest (the fragrant, colored outer rind) are widely used in cooking and baking.
