eggplant
Eggplant is a relative of tomato, member of the nightshade family. Though botanically a fruit, it's cooked like a vegetable. It comes in a variety of shapes, sizes, and colors. They absorbs flavors well and can be grilled, roasted, stewed, or even eaten raw.
